Chinese Okra and Tomato dish
I learn a new dish from my next-door neighbor today. Some Chinese okra vines crawled over her garden with one over two-feet long okras and many not-as-long ones. She picked the long one and looked for me to have a picture taken with it and me. She’s so proud and joyful for the size. I told her to pick it a few days ago because okra meat would turn tough when it gets too old. Anyway, the way she cooked it, even a little old would be still ok.
First, sauté the garlic and onion and let caramelized; and then add water and seasonings (turmeric powder, chili pepper); and then put the browned bone-in beef (about 2 in. cubes) in the seasoned water (add enough water to cover the meat if needed) and cook slowly until the water soaked up (about 2 hrs.) and become thick. In separate pan, sauté some thinly cut okra and then add thinly cut tomato. Cook slowly until thicken. Then combine the latter to the meat and mix well and garnish with cilantro when serving.
I tried to cook the dish with turkey breast instead of beef and with ginger and celery seed instead of turmeric powder and chili pepper. Keep everything else the same way. It tasted mild and also delicious.
